Patty Cakes

What’s a patty cake? It’s just a more old-fashioned name for a cupcake!

I came across a patty cake recipe in Women’s Weekly’s Baking Favourites and thought it’s worth a try. The batter looks slightly thicker than I remembered from my other experiences with cupcakes, which explains why I was a little worried when I sent them into the oven. I absolutely didn’t want another batch of cupcakes with cracked and unbaked tops (like my Daiso recipe). But no, they turned out way better than expected actually.

Each cupcake was a bright yellow colour and had a lovely dome. Pipe them with a little buttercream frosting and they look perfect, don’t they? Or you can eat them naked, just the way they are. Either way, you absolutely won’t go wrong!

For me, I wanted to perfect my buttercream technique so I made a batch of chocolate buttercream to go along with it. Vanilla cupcakes with chocolate buttercream, it’s a classic combination of flavours.

And I’m craving to bake a chocolate version with peanut butter buttercream soon! Yet another classic too!
