Aspiring Bakers #34: Choux Party – Monster Puff!

I am submitting this post to Aspiring Bakers #34: Choux Party (August 2013) hosted by Jasline of Foodie Baker

My first time participating in Aspiring Bakers, much as I have heard of it sometime back and always wanted to join. But this August 2013, I finally got down to baking something in line with the theme, instead of letting it continue to be an unfulfilled resolution. The theme for the month is ‘Choux Party’ but being me, the un-creative me, I couldn’t think of anything better other than the classic cream puff with pastry cream.

The only twist is perhaps the piping of the monster face, drawing inspiration from watching Monsters University in Phuket at the beginning of the month. During my brainstorming, I had thought of a wonderful idea, complete with monstrous eyes, teeth and ears. However, reality hurts. My monster puff didn’t turn out the way I had imagined it to be. My idea shall continue to remain as an idea at the back of my mind for now. My entry is probably going to the least interesting one out of all the submissions. But hey, at least I got the ball rolling and got down to do something that I have always wanted to try!

Choux Puffs
Recipe adapted from Keiko Ishida’s “Okashi: Sweet treats made with love”

Cake flour 75g, sifted
Water 75g
Fresh milk 50g
Unsalted butter 50g, cut into small cubes
Sugar a pinch
Salt a pinch
Egg 4, at room temperature

1. Preheat oven to 200℃. Line a baking tray with parchment paper.
2. In a small saucepan, combine water, milk, butter, sugar and salt. Bring to a boil over medium-high heat, then immediately remove from heat.
3. Using a wooden spoon, quickly stir in flour until combined and mixture comes together in a ball. Return to heat and cook, stirring continuously until the mixture leaves the sides of the saucepan.
4. Transfer mixture to a clean bowl. Add eggs one at a time, beating with a wooden spoon until egg is fully incorporated before adding the next.
5. Pipe the batter onto lined baking tray.
6. Bake for about 20 minutes at 200℃, then reduce heat to 180℃ and continue baking for another 20 minutes.

Pastry cream
Recipe adapted from Keiko Ishida’s “Okashi: Sweet treats made with love”

Fresh milk 200ml
Vanilla extract 1/4tsp
Egg yolks 3
Castor sugar 50g
Cake flour 20g, sifted.

1. Add milk and vanilla extract to a saucepan and bring to a boil.
2. In a clean bowl, beat egg yolks and sugar together until mixture is pale yellow in colour. Add flour and mix well.
3. Add hot milk to the egg mixture and fold through.
4. Return egg and milk mixture to the saucepan and bring to a boil over high heat, stirring continuously. Continue mixing until mixture becomes smooth and glossy, then remove the saucepan from heat.
5. Transfer pastry cream to a tray, cover with cling film and place in the refrigerator to cool. Before use, gently beat cream with an electric mixer until smooth and creamy.

For assembly, I sliced the puff into half and piped the pastry cream in between. If you prefer Beard Papa’s style, just need to create a hole either at the side or at the bottom of the puff and pipe the pastry cream in. Having tried both, I would say the slicing method is more preferred by me!

F-O-U-R!

One, two, three, F-O-U-R! We are 4!

We went for brunch at PS. Cafe @ Ann Siang Hill to kickstart our day of celebrations. Climbed the flight of stairs in order to reach the cafe, which was a good form of exercise to whip up our appetite. The food was good, complete with a nice ambience. Prices are typical of brunch prices, which is 20 dollars and up. Nothing less than that, but the portion size justify the price so it is worth the money. We ate 2 mains and ordered 2 drinks, and by the time we finished, we were so full and we had to give up our pre-eating dessert plans… although they look so appetising on the display table and we had such a hard time choosing which to order and at the end of the day, we tried none because we needed to preserve our stomach for more activities ahead.

Watched Smurfs 2 as the intermission between brunch and dinner. La-la-la-la-la-la-la-la-la-la-la! I have been looking forward to catch this sequel. The interactions between Gargamel and the cat never fails to amuse me lols. Gargamel is so evil-y cute.

Then it was En Japanese Dining Bar for our ala-carte dinner buffet! I have always enjoyed Japanese food. When we just began dating, we could head to Ichiban every week for our meals. We were such loyal supporters of Ichiban, faithfully gathering the stamps to spin the coveted wheel at the end of each card. But each spin never fails to disappoint us because we have never gotten the $80 voucher despite our many tries. Eventually, we gave up lols!

So imagine free flow sashimi, that has to be the best! And we had that at En Japanese Dining Bar, along with Pork Shabu Shabu and a decent selection of other Japanese dishes. We were in a good treat indeed, Izakaya style!

Dear Phuket, you have not failed us!

Way back in June when we were deciding on our travel destination, Phuket immediately came to our mind. Nonetheless, when more research suggests that August is the monsoon season in Phuket, our hearts sank a little. But we followed our hearts and went ahead with our choice. Thankfully, the sun was bright and sunny on our beach day, and torrential rain only came on our departure day. Dear Phuket, you have not failed us indeed!:)

Going to Phuket during the off-peak season has its perks. We enjoyed relatively affordable off-peak rates for our accommodation at Sea Pearl Villas Resort, which would have been more than 2x the price that we have paid during their peak period.

Throw in a free upgrade to the one bedroom deluxe suite and a complimentary 2-way airport transfer in a Mercendes Benz when you stay 3 nights and more, seriously what more could we ask for?

Sea Pearl Villas Resort offers hourly shuttle bus service to Jungceylon and Patong Beach (in front of Ocean Plaza). First bus starts at 10 am and last bus is at 8 pm. Jungceylon and Patong Beach are the heartbeat of Patong City, no doubt but they are still a bus ride (15-20 mins away). If you prefer a touch of resort living for your holiday, Sea Pearl Villas Resort can potentially offer that. But if you prefer amenities to be walking distance from your hotel, you may wish to reconsider your choice of accommodation.

Patong Beach itself is characterised by colourful sunloungers, various national flags, snacks and drinks stores etc. We lied there for approximately 4 hours and we have many vendors peddling a wide range of products like pomelo, temporary tattoos, shawls, dresses etc. It’s like a lazy form of shopping where the sellers come straight to you repeatedly so you don’t have to worry about changing your mind at all.

On the other side of Patong Beach is dotted by shopfronts, hotels and cafes/pubs/restaurants. Walk around the shops for 15 mins and you will come to the conclusion that they probably got their goods from the same supplier since the items sold are so confusingly similar.

Phuket Town – Rang Hill – Weekend Market

On our 2nd day, we decided to venture out of Patong City and head down to Phuket Town. By chance, we met a taxi uncle that somehow or rather who managed to persuade us to hop onto his taxi to Rang Hill and the Weekend Market. En route, we decided to be nice and stopped by a souvenir shop so that the taxi driver could earn another stamp lols.

Food, as always, cannot be overlooked. I love taking shots of the food that we eat during the trip. Le Siam – the restaurant rated 4.5 out of 5 stars by Tripadvisor. The street vendor that sells chocolate banana crepe for 60 baht. The in-hotel seafood buffet because we rather not travel out for food. The Coffee Club @ Banana Walk, which serves amazing all-day breakfast and lunch menu. Bite In – the orange-themed restaurant in Jungceylon. The rushed lunch affair at the hotel’s cafe before catching the airport transfer limousine. Food – they complete our travel journey!

Miss Bakerholic…is back!

Ok, my true self is back! The one that now spends her weekend mornings trimming the leaves and flowers is a new side of me, but the Miss Bakerholic side did not disappear. She’s back! Instead of only favouring Zoji the bread machine for the past 3 weeks, the oven is finally getting the attention that it well deserves. Macarons on Saturday and pandan chiffon cake on Sunday.

I have got lots more to improve on the macarons. I decided to bake some macarons yesterday as I just bought the mat from Kitchen Capers some weeks ago since they are having some July promotion. But then my macarons have feet but they can’t be removed nicely from the mat. And I need to learn how to pipe them nicely. I so need an Aunt Agony for baking… Hopefully the 22nd August demonstration class will provide me with the solutions that I am looking for!

But the pandan chiffon cake that I baked today made up for yesterday’s disappointment. After my frankenstein’s cake a while back, I was very mindful of the proportion of pandan paste that I use to make sure that I don’t scare people off with the green colour. Nonetheless, it was a challenge though trying to work within my baking corner as much as possible, so I don’t have to invade my Mum’s kitchen top.

My July 2013

I was hoping so much for July to come when it was only March/April then. And indeed July came but it’s flying by too fast. Oh wells!

One major milestone has got to be shifting house! And immediately that Thursday, I went to exercise my right as a new CC member. I attended a baking workshop at the CC outside my house lols! But I still have a lot of adjustments to make, like learning to go home from all corners of Singapore and adapting to the 1hr bus ride home (vs. 30mins in the past).

Then we had the Panda Day to River Safari on the 2nd weekend of July!:) Panda Day was a huge success indeed!

My bread friend Zoji!

This post is a little outdated because I got Zojirushi BB-HAQ10 (“Zoji”) close to 3 weeks ago, alongside a few other electrical appliances. Wheeee! I will blog about KitchenAid KSM150 (“Kate”) once I begin using it, which will be after my baking corner is up and running. Can’t wait actually!

What I really enjoy about Zoji? Here goes!

1. No more sticky hands – Baking a bread by hand, as the name suggests, requires extensive use of your hands. They often become sticky and unsightly, with lumps of dough stuck to your fingers. And if your phone rings at this moment, good luck to you for trying not to make it a missed call. And this actually happened to me before. If not the phone, beware of the door bell as well lols.

2. No more achy arms – To try to work a bread dough to the desired state is like going to the gym. You may sweat and your arms may ache, but even still the stubborn dough may not have reached its ideal state.

3. Free time – Pop the ingredients into Zoji and you are free to do your own things in the meantime. You can go take a afternoon nap, surf the net, go swimming and get washed up, before you pop back by Zoji to admire the baking-in-process. One loaf of bread typically takes 3 hours or even more, so that means 3 hours of me-time for yourself. So why not?

Zoji has been behaving a little erratic I must say lols. Or maybe it’s because I haven’t understood him well enough yet. But when he’s behaving well, the bread tastes great! My personal favourite thus far has to be the milk bread with its cotton soft texture. Ok please remember to use active dry yeast instead of instant yeast. It was by trial and error that I discovered that using the former gives you much more volume in your bread. Active dry yeast is more expensive than instant yeast no doubt, but it definitely yields better results. So absolutely no regrets there.

Patty Cakes

Patty cake, patty cake, I’m the baker’s man
I bake them cakes as fast as I can

What’s a patty cake? It’s just a more old-fashioned name for a cupcake!

I came across a patty cake recipe in Women’s Weekly’s Baking Favourites and thought it’s worth a try. The batter looks slightly thicker than I remembered from my other experiences with cupcakes, which explains why I was a little worried when I sent them into the oven. I absolutely didn’t want another batch of cupcakes with cracked and unbaked tops (like my Daiso recipe). But no, they turned out way better than expected actually.

Each cupcake was a bright yellow colour and had a lovely dome. Pipe them with a little buttercream frosting and they look perfect, don’t they? Or you can eat them naked, just the way they are. Either way, you absolutely won’t go wrong!

For me, I wanted to perfect my buttercream technique so I made a batch of chocolate buttercream to go along with it. Vanilla cupcakes with chocolate buttercream, it’s a classic combination of flavours.

Miss Pink Velvet

Please say hello to Pink Velvet! She’s a lovely furry bear that we got over the Easter weekend:) She is 41cm tall and weighs 227g (I just realised she is as heavy as a block of unsalted butter)! And Pink Velvet is 名副其实 Miss Bakerholic Mini. She has her own rolling pin, her spatula, an apron and a chef hat!

Pet Cruise – 16 March 2013

We humans have cruises, and so do dogs! I read about Pet Cruise on the CNA and decided that Spencer is going for it. He has neither taken a boat ride nor swim before. And I was really excited to tick these 2 activites off his to-do list. We hadn’t really had an excursion since his operation in October and thought this would be quite interesting for him.

And so on the day, our whole family went on an excursion! Spencer was initially afraid being his maiden experience on a boat that shakes left and right, that moves and that makes (engine) noises. But slowly, he grew accustomed and began exploring the boat as if it was his boat. But thankfully, Joe and Max are really easy-going people – basically no rules exist in the boat which was what we really liked. Spencer was allowed to roam around. Spencer was allowed to sit on the cushion. Spencer was even allowed to answer nature’s call if he had to (but he didn’t!) Well, the whole Pet Cruise is for Spencer so of course he had to live like a king, at least for that 2 hours! And according to Joe, Spencer is the first Border Collie onboard Pet Cruise!

The itinerary for the day was 2 hours long – 30 mins to Seletar Island + 1 hour of free and easy + 30 mins back to SAF Yacht Club. Pretty cool! Before reaching our destination, we put on the lifejacket for Spencer so he could get used to a pink polka-dotted lifejacket on his body. And he looks so cute in pink, albeit being a boy! The pink colour really stands out against his black fur coat.

Once we reached Seletar Island, we carried Spencer into the water. Once in the water, you could see him paddling his feets really hard – the typical doggie style! If he wanted to swim, he could actually swim faster than me:) But he preferred getting onshore to explore Seletar Island, because he didn’t want to head back to the boat when we were about to go home. Probably still a little scared on his maiden experience in the water. But we just ushered him to swim back to the boat and he did! So happy!

On the way back, he began his exploration of the boat and sea. He loved to stare out of the boat to look at the sea and enjoy the breeze and then turn around and show us his satisfied face! Or else at other moments, he would show us his emo side and hang his head down against the ledge and looked really deep in thoughts.

I think not just Spencer, we had a great time onboard as well! Daddy and Mummy was happy to be chilling on the boat and to be able to witness Spencer’s maiden sea experience, and most importantly, to catch glimpses and snippets of the happy boy’s smile!:) To us, that was all that matters that afternoon:)

Boarding is at SAF Yacht Club and it costs $40/guest (guest = human or pet) with a minimum charge $200 if you have less than 5 guests. Alternatively, you can book the entire boat for $400 and bring along 10 guests that afternoon. Whichever option, I think it will be a great afternoon for your pets and yourselves!
